chicken not-so-hot-pot pie
aww man. so i made a chicken pot pie today. it was okay.. not so bad but not good enough to give as a gift.
well here’s the recipe (if you do decide to make it, please add a thickener for the filling)
Ingredients:
filling:
1.5 cups of skim milk
1 med potato (peeled and chopped)
1 can of vegetable chicken noodle soup (strain broth)
1 handful of chopped baby carrots
2 fresh corn (remove core? )
2 celery stalks (nicely diced)
pie crust :
2 cups of flour
1.5 sticks of cold butter
1.25 cups of ice cold water
boil everything for the filling together until the potatoes are tender. mix the pie crust ingredients together then stick it in the freezer to chill ( about 5 minutes). Pour filling into a casserole dish, then roll the crust over the top. bake for 30 minutes and voila! chicken pot pie ![]()
the Quickie
it’s a nice winter’s day and what does that call for?
tortilla soup!!

Burin and I was hungry after watching dexter, so we decided to get some soup -since we were both coughing and sniffling.At tom thumb’s, Burin came up with the awesome idea of chicken tortilla soup.With the help of his nifty iphone’s internet connection, we came up with this
Recipe:
2 cans of chicken noodle soup
1 can of rotel tomatoes
1 avocado, chopped
2 handfuls of broken tortilla chips
lime
3 sprigs of cilantro,chopped
Mix everything together (except chips, avocados,cilantro,lime) and bring to a boil. Pour into serving bowls and top with cilantro and chips. Squeeze a bit of lime into the bowl and enjoy!
Vegetable Smegatable with Barley Marley Soup :)
I made the most delectable soup today
I started at 1:00pm and finished 4 and a 1/2 hours later ^_^
Veggie delux with stew meat. The nice butcher at Tom Thumb tenderized the meat for me so it’s extremely tender
I thickened the soup with barley so it will stick to your ribs when you eat it.
Next time i will invite you over for a bowl <3

big al’s chili
i ate out today with my squirrel. we at a bakery built on a corner. i had chili made by big al. i didn’t see him today. i wonder who really made it- i didn’t see a black man in the kitchen. perhaps he made it the day before. how else could he make chili and also be on KISS fm? man, it was good chili. thanks big al.
rectangular pizza
i made pizza today. i ate it and it was good. the first pizza was a deep golden brown. needless to say, it was definitely crunchy. i really enjoy the crispness- i just kinda wished it has a little chewy too.
pizza number two was yummy. it wasn’t as crunchy- it was also out of the oven faster ( hmm wonder if there’s a correlation. )
well that was lunch today. i promise i’ll eat out next time. afterall … i am the maverick diner.. and lately i’ve been dining in ^_^
holy pancakes!!!!
okay so i have already perfected the art of regular pancakes but HOT DAMN! i have created the most awesome strawberry pancakes. ^_^
here’s the recipe for the regular pancakes:
- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon white sugar
- 1 1/4 cups milk
- 1 egg
- 3 tablespoons butter, melted
- 2 tablespoons of vanilla extract
microwave the milk and butter until warm, then mix in the eggs. add everything else then cook over med-high heat. serve with warm syrup
for the strawberry goodness, add to the original pancake mix
- 8 crushed strawberries
- 2 tablespoons of white sugar
- 1/4 cup of all-purpose flour
- 2 tablespoons of baking powder

i am savoring the last few bits of my penne con pesca.mmmmm
that’s right, folks. it’s an italian-spanish infusion. i made tortilla crusted tilapia seasoned with chipolte and lime. i paired with a spicy penne alfredo side. broccoli was also thrown in for some green. needless to say, it was damn tasty.
disappointing lunches makes tummy sad :(:(
so yea…today is thursday and i’m determined to have a good lunch.
tuesday was god awful. god awful i say
it was a blasphemous curry dish on mediocre rice. now mind you, when it comes to curry - i’m pretty flexible. *sigh*
all you really have to do is cook the meat, add potatoes other veggies OPTIONAL, and some form of liquid.
well apparently it was way to hard for Bethany’s to get it right
boo for their lack of culinary skillz.
The next day- Wednesday- was my fault. on the way home, i had an urge for a salad wrap. well i screwed it up. lol
the sausage was too sweet and savory- the onions just made it even more sweet. then the avocado chunks- that made iteven more rich.
unfortunately the lime didn’t add any brightness the dish lacked, it just added a sharp bitter taste to the meat.
i think the best part to this fiasco was the tortilla . it was yummy - i guess that’s bc i didn’t make it from scratch but instead, bought it from my favorite place : Costco.
Although the past two days have been crappy, i am optimistic. i will not let myself be on the same level as the curry from bethany’s . i WILL have a great lunch. maybe chipotle or j gilly’.
oh and to answer the ham and cheese question from a fellow blogger- a great ham and cheese sandwich place has gotta be corner bakery- if you want it a little more greasy try the one from la madeleine’s- they put cheese on top of the sandwich then grillZ it. crazy awesome. i can only handle a bite but you might be up to the challenge ^_^
