Diabetes and Kids

Medical doctors have just increased their concern on the rise of children with diabetes.  Diabetes 2 and in general is more difficult to fight in kids because it progresses more quickly.  Oral  medications has now been switched to injected insulin to kids because of it not taking effect.  The research made with metformin but did not have good results.  Children in the research were obese and of ages 10-17.  This article contains  more information on the research with metformin.

Apple and Oat Pancakes

Breakfast is a very important meal of the day and therefore we should have a good meal. If you love pancakes here is a good recipe that is also beneficial to your diabetes.

1/3 cup quick cooking rolled oats
2 cup cold water
2 cup Pancakes, buttermilk, complete dry mix
1 small apples , grated
2 tbsp sugar
1/2 tsp ground cinnamon
3/4 cup unsweetened applesauce
1/4 cup Syrup, pancake, reduced calorie

Directions

1 Mix the 2 cups of water and oats together in a medium bowl, let sit for 5 minutes.
2 After 5 minutes add in the pancake mix, grated apple, sugar, and cinnamon to the oats. Stir until mixed together.
3 Spray a nonstick pan with nonstick cooking spray and heat until medium hot.
4 Pour the batter into the pan 1/4 cup at a time. Cook until bubbles start to break on the pancake and the edges look crisp.
5 Flip and cook the other side until a golden brown.
6 While pancakes are cooking, mix the applesauce and syrup in a small pot and warm over low flame. Serve 2 tablespoons over 2 pancakes.

Fruits and Veggies

Researchers have found that the intake of fruit and vegetables make a difference towards the risk of getting type 2 diabetes.  Eating the correct amount of 5 servings a day of fruit and vegetables combined can lead to a better lifestyle.  Also it is important to vary the types of fruits and vegetables consumed to lower chronic diseases.  People who ate 16 different type of fruits and vegetables showed a 40 percent likelihood of getting type 2 diabetes than people who only consumed 8 types of them. Diabetes and Women

Women Pregnancy can be risky when you have diabetes.  You have to take more precautions when you are a diabetic then when having a normal pregnancy.  According to http://cdc.gov , there are a couple of things to keep in mind while pregnant and diabetic.

  1. Plan Your Pregnancy
  2. See your doctor
  3. Monitor your blood sugar
  4. Take medications on time
  5. Control and treat low blood sugar quickly
  6. Get regular check ups with your doctor
  7. With gestational diabetes get your blood sugar checker after delivery it might risk to a type 2 diabetes .

Healthy Choices

Making healthy choices maybe difficult at some time but its also beneficial to our body. Here are some tips your should follow according to a normal diet.

1. Eat fruits and Vegetables

2.Avoid sugar drinks, choose water over sodas and if so drink low sugar drinks.

3. Choose non fat dairy products, eat on a low fat and skim milk product

4. Watch portion sizes

5.Use liquid fats instead of solids they are much healthier

Chicken and Rice Casserole

I am a very good cook , I love to eat fatty foods.  I want to share a delicious platter with you that I know will satisfy you. Its a recipe for diabetic patients.  I hope you enjoy !

  • 2 teaspoons olive oil
  • 1 medium onion, chopped
  • 4 scallions, white part and 1 inch green, chopped
  • 2 ribs celery, chopped
  • 2 large cloves garlic, minced
  • 2 cups cooked rice
  • cooking spray
  • 1 ½ pounds boneless, skinless thicken breasts, rinsed and patted dry with paper towels, then cut into thin strips
  • 1 14 1/2-ounce can no-salt-added crushed tomatoes
  • 4 ounces shredded low-fat Swiss cheese
  1. In a large non-stick skillet, heat oil over medium heat.  Add onion, scallion, celery, and garlic. Sauté, stirring occasionally, until vegetables are limp (about 5 minutes).
  2. Stir in cooked rice. Transfer vegetable-rice mixture to a bowl and set aside.
  3. Using same skillet, lightly coat the skillet with cooking spray. Add chicken breast strips, and sauté until browned on all sides for about 8 minutes. Transfer chicken pieces to a shallow 3-quart casserole dish.
  4. Top chicken with vegetable rice mixture. Spoon tomatoes over all and top with shredded cheese.
  5. Cover and refrigerate overnight.  (You can also freeze this to save it for later.)
  6. When ready to bake, bring casserole to room temperature before baking.
  7. Preheat oven to 350°F.
  8. Bake, covered, for 20 minutes. Uncover and continue to bake for 10 minutes more, until mixture is bubbly and top is lightly browned

In this disease there is more probabilities in African Americans, Latinos, Asian Americans , and Native Americans to be diagnosed with this disease.  According to http://www.floridashealth.com  type 2 Diabetes is much higher in Latinos rather that non-latino whites. Statistically, about 24% of Mexican Americans in U.S.A. and 26% of Puerto Ricans have type 2 diabetes.

  • Going many times to the restroom
  • Quenching thirst frequently
  • Weakness and Fatigue
  • Loosing weight without even trying
  • Tingling numbness in feet , hands, and legs
